canned and restaurant coffee is robusta - lower grade beans that are
not only cheaper but are much lower quality and flavor, often bitter.

that affect the roasting process so that each bean is developed
to perfection. With the use of small batch roasters, the roastmaster

Freshly roasted specialty
peaks in flavor at about day 4, and deteriorates after that. At about
2 weeks old, the coffee flattens out and after about a month, it's stale.
The oil in the bean becomes bitter and rancid.
